Food journal - May 4th, 2008

Breakfast:

  1. 1/2 cup of reduced sugar frosted flakes cereal
  2. 1/2 cup of special k with strawberry cereal
  3. 1/2 cup organic soy milk
  4. 1/4 cup 2% milk (ran out of soy milk)

Snacks:
  1. four palm fulls of unsalted cashew nuts
  2. one bite of da boy's ranch potato chip (yuck)
  3. three slices of made-from-scratch banana bread

Lunch:
  1. Eight slices of beef leftover from yesterday's dinner
  2. A packet of ramen noodles
Dinner:
  1. Three thick meaty BBQ pork ribs that da boy grilled outside on the deck
  2. Three scoops of potatos (sliced, and cooked in butter, how sinful)
  3. Medium bowl of salad with my standard Asian miso dressing
  4. A big bite size of the banana bread (see pic above: that piece at the corner)

I made banana bread today, too! (Banana oatmeal bread, to be specific.) Yours looks great. (Mine looks spongy. Because it IS spongy.)

Hey FP! My favorite bread in the whole wide world is banana bread, however I still can't figure out how to make it moist and dense.

Mmm oatmeal and banana bread, that's a great combo! I smeared a layer of oatmeal, brown sugar, and flour on top of mine.

Tried posting this yesterday, not sure if it went through. Forgive if this is repeat. I am fascinated with this food journal. I guess I expected someone so tiny to eat so little. You eat, girl. I love that!

Hey Mae,

nope not a double post.

hahaha, i love to eat, sadly enough my metabolism is slowing down (due to old age) and er, the food just doesn't get burned up as fast as before. hence the food journal.

you've seen how i gorged down those dimsums... :)

Ahh but dim sum doesn't count. Didn't you hear? There's no calories in Sunday dim sum! The kind Chinese chefs remove them before serving. That's why you can have unlimited servings. Nice, huh! heh

Banana-Oatmeal Bread
1 1/4 cup all-purpose flour
1/2 cup unpacked brown sugar
1/2 tsp table salt
1/2 tsp baking soda
1/4 tsp baking powder
3 tsp canola oil
1 large egg(s), beaten
2 medium egg white(s), beaten
3 large banana(s), ripe
1 cup uncooked old fashioned oats


Preheat oven to 350°F. In a large bowl, stir together dry ingredients (except for oats). Add oil and eggs; mix thoroughly.


In a smaller bowl, mash bananas with a potato masher or fork. Add bananas and oatmeal to batter.


Spray a loaf pan with cooking spray. Pour batter into pan and bake until top of loaf is firm to touch, 45 to 55 minutes. Remove from oven and allow to cool in pan for 5 minutes. Flip out and cool on a wire rack for another 10 minutes.

Eat until your pants explode.
